- 200g shrimp (peeled and deveined)

- Salt and black pepper to taste
- Fresh parsley (chopped, for garnish)
Instructions:
Prepare the Zucchini Noodles: Wash and spiralize the zucchini. If you don’t have a spiralizer, you can use a vegetable peeler to create long strips.
Cook the Shrimp:
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.

- Cook for 2-3 minutes per side until the shrimp turn pink and are fully cooked. Remove them from the skillet and set aside.

- Add lemon juice and zest, stirring well to combine.
Toss the Zucchini Noodles:
Add the zucchini noodles to the skillet and toss them in the garlic lemon sauce. Cook for 2-3 minutes until they are slightly tender but still crisp.
Combine and Serve:
- Return the shrimp to the skillet and toss everything together.
- Adjust seasoning with more salt and pepper if needed.
- Serve immediately, garnished with fresh parsley.
