Ingredients:

Serves: 2

  • 2 medium zucchinis (spiralized into noodles)
  • 200g shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 small lemon (juiced and zested)
  • 1/2 teaspoon chilli flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley (chopped, for garnish)

Instructions:

Prepare the Zucchini Noodles: Wash and spiralize the zucchini. If you don’t have a spiralizer, you can use a vegetable peeler to create long strips.

Cook the Shrimp:

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the shrimp and season with a pinch of salt, black pepper, and chilli flakes (if using).
  • Cook for 2-3 minutes per side until the shrimp turn pink and are fully cooked. Remove them from the skillet and set aside.

Make the Sauce:

  • In the same skillet, add the remaining olive oil and minced garlic. Sauté for about 1 minute until fragrant.
  • Add lemon juice and zest, stirring well to combine.

Toss the Zucchini Noodles:

Add the zucchini noodles to the skillet and toss them in the garlic lemon sauce. Cook for 2-3 minutes until they are slightly tender but still crisp.

Combine and Serve:

  • Return the shrimp to the skillet and toss everything together.
  • Adjust seasoning with more salt and pepper if needed.
  • Serve immediately, garnished with fresh parsley.

Tips:

  • For added flavour, sprinkle some grated Parmesan cheese (optional).
  • Swap shrimp with grilled chicken or tofu for variation.
  • Avoid overcooking zucchini noodles to maintain their texture.
