DIY Cabbage Soup - Quick Vegetarian Recipe to lose weight

 

This simple, hearty soup is packed with veggies and makes a great low-calorie option if you're aiming to lose weight. It’s easy to prep, and the batch can last you several days.

 Ingredients:

  • 2 green peppers

  • 6 large green onions

  • 1–2 cans diced or whole tomatoes

  • 3 carrots

  • 1 bunch celery

  • 1 container (about 10 oz.) mushrooms

  • ½ a cabbage

  • 1 packet Lipton soup mix (or similar)

  • 1–2 bouillon cubes (optional)

  • 1 can (48 oz) V8 juice (optional)

  • 12 cups water (if not using V8 juice)

Method:

  1. Chop all vegetables.

  2. Add everything to a large pot with water or V8 juice.

  3. Bring to a boil, then simmer for 1–2 hours.

  4. (Optional) Sauté onions before adding for extra flavor.

Tips:

  • No need to add extra salt—the soup mix and bouillon add enough flavour.

  • Customize with pepper, curry, garlic, parsley, or other calorie-free spices to suit your taste.

  • Store in the fridge for easy meals throughout the week.
