This simple, hearty soup is packed with veggies and makes a great low-calorie option if you're aiming to lose weight. It’s easy to prep, and the batch can last you several days.
Ingredients:
2 green peppers
6 large green onions
1–2 cans diced or whole tomatoes
3 carrots
1 bunch celery
1 container (about 10 oz.) mushrooms
½ a cabbage
1 packet Lipton soup mix (or similar)
1–2 bouillon cubes (optional)
1 can (48 oz) V8 juice (optional)
12 cups water (if not using V8 juice)
Method:
Chop all vegetables.
Add everything to a large pot with water or V8 juice.
Bring to a boil, then simmer for 1–2 hours.
(Optional) Sauté onions before adding for extra flavor.
Tips:
No need to add extra salt—the soup mix and bouillon add enough flavour.
Customize with pepper, curry, garlic, parsley, or other calorie-free spices to suit your taste.
Store in the fridge for easy meals throughout the week.
